Our Story

At Portia's Hearth, we believe your morning cup should mean something. Not just fuel, a ritual. A moment of intention before the day begins.

We started with a single obsession: finding coffee that tells the truth about where it comes from. No blends, no shortcuts. Just single-origin beans, sourced from farms we believe in, roasted to order, and shipped to your door within days of leaving the roaster.

How It All Began

It started in our kitchen at the end of 2025. We pulled what turned out to be the best cup either of us had ever tasted, smooth, layered, with notes of chocolate-covered cherries that lingered long after the last sip. We looked at each other and knew: this was worth sharing.

We had no roadmap. Just a deep love of coffee, years of chasing the perfect brew through French presses, moka pots, and our current obsession, the Chemex pour-over, and a conviction that great coffee should be accessible, traceable, and rooted in something real.

Portia's Hearth was born from that cup.

Every roast in our collection is named for a virtue, not as a marketing device, but as a genuine reflection of what we believe coffee can be.

Courage The boldness to source from remote, high-elevation farms and bring back profiles that challenge the ordinary.

Wisdom The discernment to select partners who farm sustainably, honoring the land and the people who tend it.

Justice The commitment to direct, equitable relationships with growers, so that every purchase does good from seed to sip.

Temperance The restraint to roast with precision, preserving the bean's natural character without overwhelming it.

These aren't just names. They shape every decision we make, from which farms we partner with to how we roast and ship each order.

Meet the Founders

Joseph Erjavec, Co-Founder

Joseph brings a background in finance and a lifelong love of coffee to Portia's Hearth. His analytical precision shapes how we source, price, and build relationships with our farming partners, always with fairness and sustainability at the center. Off the clock, he's an avid chess player who starts every morning with a Courage roast.

Ashley Erjavec, Co-Founder

Ashley's career in IT gave her a sharp eye for systems, problem-solving, and building things that actually work. She brings that same rigor to the digital side of Portia's Hearth, from the online experience to the community we're building around it. Her mornings start slowly, with a book and a cup of Wisdom.

Together, as partners in life and in business, Joseph and Ashley built Portia's Hearth on a simple belief: that the best coffee is grown with care, roasted with intention, and shared with people who appreciate the difference.
